Crushed Rainbow Snack
              Place several 
              Keebler Rainbow Vanilla Wafers into a resealable plastic bag.
                Seal the bag and then roll a rolling pin over it to crush the 
              wafers.
                Open the bag, stir in a few spoonfuls, of vanilla pudding, and 
              then eat
               the treat - right out of the bag.
               
              St. Patrick's 
              Punch 
              1 (1/2 gal. ) 
              vanilla ice cream 
              4 c. orange juice 
              1/2 c. lemon juice 
              2 (28 0z.) bottles lemon-lime carbonated soda, chilled 
              
              Spoon ice cream into punch bowl. Add the orange and lemon juices 
              and
               stir gently with spoon. Add lemon-lime soda slowly and stir 
              gently. Punch
               will become foamy. Ladle into plastic cups and serve. Makes about 
              20 servings.
               
              Leprechaun's 
              Lime Surprise 
              Sprite/7up
              lime sherbet
              green sugar sprinkles 
              
              Fun drink to go along with your St. Patrick's Day treats... Put 
              one or two small scoops
               of lime sherbet in a clear plastic cup. Pour Sprite or 7Up over 
              the sherbet.
               Add some green sugar sprinkles and you have a Leprechaun's Lime 
              Surprise! 
               
              St. Patricks 
              Day Drink
              Get 10oz plastic 
              green bottles of Mountain Dew. Make some
               computer labels to put over the others and call them
               "Leprechaun Drink" or "St Patrick's Day Brew" or "Irish  Dew"

              Leprechaun 
              Dust
              Materials 
              Needed:
              JelloŽ  Brand instant pistachio pudding 
              small jars with lids (baby food jars) 
              spoons 
              milk
              Directions:
              Place 1 tablespoon of the leprechaun dust (pudding mix) 
              into a jar (1 for jar for each child) 
              Add 1/4 cup cold milk adding the milk makes the instant pudding 
              turn green 
              Place lid on tightly and have your little leprechauns shake away.
              
              Enjoy the results and let the imaginations fly.
               
              Do You Believe 
              In Leprechauns?
              If the child says 
              yes give them a tablespoon of Jell-o Brand pistachio pudding.
               It looks white, but turns green when the milk is added. 
              If the child says no give them vanilla pudding.
                 
              St. Patrick's 
              Day Pie
              1 (8 oz.) small can 
              crushed pineapple with juice 
              1 box instant pistachio pudding mix 
              9 oz. (medium-size) container frozen non-dairy whipped topping 
              1 (9-inch) prepared graham cracker crumb crust 
              
              Place pineapple and pudding mix in a mixing bowl and mix well. 
              Fold in whipped
               topping. Spoon into pie shell and put in the refrigerator of 39 
              minutes before serving. 
               
              
              Key Lime Pie
              
              Place 5 egg yolks in 
              a large bowl, beat on low speed on electric mixer for about 1 
              minute.
               Stir in one can (14 oz.) sweetened condensed milk, then stir in 
              1/2 cup of lime juice and
               mix well. Pour filling into a 9" pie shell, lightly baked. Bake 
              at 350° for 12 to 15 minutes
               or until filling is lightly set. Cool on a wire rack for about 
              1/2 hour. Beat 5 egg whites at
               high speed until meringue consistency (soft peaks). Fold in 1/2 
              cup of sugar. Spread
               over pie filling. Bake at 375° for 10 to 12 minute or until 
              meringue is lightly browned on
               peaks. Cool on a wire rack for about 45 minutes. Refrigerate to 
              chill before serving.
               
              St. Patrick's 
              Day Cookie Pops 
              If you are looking 
              for a fun and easy recipe to do with the kids, try these
               deliciously simple St. Patrick's Day Cookie Pops. The kids will 
              smile
               and giggle while making these treats, and will have something
               fun to give to family, friends, and classmates!
              
              Ingredients Needed:
              20 vanilla wafer cookies
              1/2 cup peanut butter
              1 12-ounce bag white chocolate chips
              green and yellow gumdrops
              green Dots
              green and yellow Nerd candies
              Cake decorating writer gel in green, yellow, red, orange, and 
              black
              1 tube of green cake decorator frosting with tip
              green and yellow decorator sugar
              green food coloring
              ice cream or lollipop sticks
              wax paper or paper plates
              
              Instructions:
              Spread peanut butter onto the flat side of the cookies.
               Place an ice cream stick into the peanut butter on half the 
              cookies.
               Top with another cookie so the stick is sandwiched between the 
              two cookies.
              
              Melt chocolate chips in the microwave, one minute, then in 20 
              second
               increments, stirring until smooth. Before melting, separate the 
              white
               chips into two bowls. After melting, add a few drops of green 
              food
               coloring to one of the bowls of white chips to make green 
              chocolate. 
              
              Dip cookie pops in the melted chips, covering completely. 
              Sprinkle with green and yellow sugar and lay or stand on 
              waxed paper or paper plates. Place in refrigerator to chill. 
              
              Fun Variations
              Leprechaun
              After coating with white chocolate, dip top of pop into 
              green sugar. 
              Slice two yellow gumdrops to make beard. Allow to dry on wax 
              paper. 
              Use black and red decorator gel for eyes and mouth, and for trim 
              on hat. 
              
              Rainbow with Pot of Gold
              After coating with white chocolate, cut a green Dot in 
              half lengthwise, 
              adhere to chocolate. Before chocolate has a chance to dry, place 
              3-5 yellow
               candy nerds "in" pot. Create a rainbow with various colored 
              decorator gel.
              
              Shamrock
              After coating with white chocolate, sprinkle with yellow 
              decorator sugar,
               then draw on a shamrock using green cake decorator icing.
              
              Four Leaf Clover
              After coating with green chocolate, use green sliced 
              gumdrops to create clover leaves.
               Slice a small strip out of remaining gumdrop for stem.
               Use a green candy Nerd for the center of the clover.
              
              Note: Another variation is to use vanilla or chocolate frosting 
              instead of peanut butter for the filling. 
              
              These can also be made without sticks. Use one stick to be able 
              to dip the cookies in chocolate
               and roll in sprinkles, then remove the stick and put on wax paper 
              or paper plates, then chill.
               
              Potato Dishes

              Vegetable Snack
              Prepare a snack 
              using slices of fresh green vegetables. Examples: 
              cabbage, cucumber, avocado, zucchini squash, and lettuce.
               
              More Green 
              Foods
              You can add green 
              food coloring to melted butter on toast and scrambled eggs
               to make green eggs.  You can add food coloring to mashed potatoes 
              for lunch!!
              Also, you can add green food coloring or if you can find it in 
              your local grocery store... 
              Hershey's makes a HULK chocolate syrup that is green - add it 
              to milk and it looks green but taste like chocolate milk.
                 
              Green Mint Ice

              Baked Potato 
              Soup
              
              Ingredients 
              Needed:
              3 lbs. potatoes (medium 
              size) 
              1 T. butter or margarine 
              1 1/2 cups finely chopped onions 
              2 T minced garlic 
              1 can chicken broth 
              3 cups milk 
              1 tsp. salt 
              1/2 tsp. pepper 
              optional toppings - bacon bits, shredded cheddar cheese, chives
              Directions:
              Scrub potatoes and pierce each one with fork a few times . 
              Bake potatoes for
               1 hour at 400°, or until tender. Remove from oven and allow to 
              cool enough
               to handle, then peel potatoes. Cut 3 potatoes into soup-size 
              cubes, and set
               aside. Mash remaining potatoes. In a dutch oven, large saucepan 
              or small
               stock pot, melt butter or margarine over medium heat. Stir in 
              chopped onions
               and minced garlic. Reduce heat to low, cover and cook about 10 
              minutes or 
              until soft - do not brown. Stir in mashed potatoes ; mix 
              thoroughly. Add chicken
               broth, milk, salt and pepper. Cook and stir over medium heat for 
              a few minutes,
               reduce heat, cover and simmer about 20 minutes, stirring 
              occasionally. Add cubed potatoes,
               stir, simmer a few more minutes until heated through. Add 
              toppings to individual servings.
               
              Irish Soda 
              Bread 
              2 C flour In a large 
              bowl, stir together the flour,  1/2 tsp salt salt, baking soda, 
              baking
               powder, sugar.  1/2 tsp baking soda  1-1/2 tsp baking powder.  
              With a fork,
               blend the margarine with the  2 Tbsp sugar dry mixture until it 
              is crumbly. Mix in the
               raisins and caraway seeds. 1/4 C margarine 1 C raisins In another 
              bowl, beat together,
               the eggs 1 tsp Caraway seeds and buttermilk. Pour and stir this 
              mixture into the large
               bowl of dry ingredients. Mix  1 egg and turn the dough out onto a 
              floured board
                3/4 C buttermilk and knead until smooth. Shape into a round loaf 
              and place in a
               greased 8" cake  pan. With a floured knife, cut a 1/2" deep  
              cross in the top of the loaf.
               Bake 375 for  30 minutes - place pan on a rack to cool. 
              
               
              Lime Gelatin
              Make lime gelatin 
              for the kids to eat at snack.
               
              
              Pistachio 
              Pudding Dessert
              
              Ingredients 
              Needed:
              1 box pistachio instant pudding mix 
              1 - 8 os. container frozen whipped topping mix, such as Cool Whip
              
              1 can crushed pineapple (16 oz.) 
              1/2 cup maraschino cherries 
              1/2 cup chopped pecans 
              1 bag miniature marshmallows
              Directions:
              Mix pudding mix with crushed pineapple (drained). Stir in 
              chopped pecans
               and marshmallows. Cut cherries in half and stir into mixture. 
              Fold in
               and whipped topping. Refrigerate at least one hour before 
              serving.
               
              St. Patrick's 
              Day Pudding
              Ingredients 
              Needed:
              one 1 oz box of sugar-free 
              instant pistachio pudding for every 5 children 
              1/2 cup milk per child 
              Utensils: 
              1 small resealable plastic bag per child, tablespoon, 
              1/2 cup measuring cup, 1 spoon per child 
              
              Directions: 
              1. wash hands 
              2. put 1 Tbsp pudding mix in plastic bag 
              3. pour 1/2 cup milk in bag 
              4. close bag tightly 
              5. shake and squeeze bag 
              6. open bag and eat it up! 
               
              Shamrock 
              Sandwiches
              Let the children 
              help make open faced sandwiches by spreading soft cream cheese
               on slices of whole wheat bread.  Let each child in turn place an 
              open shamrock shaped
               cookie cutter on top of his or her sandwich and fill it with 
              alfalfa sprouts. Then have the
               child remove the cookie cutter to reveal a green sprout shamrock 
              on top of the cheese.
               
              
              Shamrock Shake
              
              Ingredients 
              Needed:
              1 cup vanilla ice cream, 
              slightly thawed 
              1/2 cup milk 
              1/8 teaspoon mint extract or flavoring 
              4-5 drops of green food coloring
              Directions:
              Pour all ingredients into a blender and blend at a medium 
              setting
               for about 30 to 40 seconds or until the consistency of a milk 
              shake.  
               
              Shamrock Shake

              Blend 1 banana, 2 
              cups lime sherbet, and 2 cups milk.

              Make sugar cookies. 
              Let the children add green icing 
              and green sprinkles on top of the cookies!
                      
              St. Patrick's 
              Day Applesauce
              For a little 
              "leprechaun magic," spoon some yellow applesauce
               into a bowl and add a drop of blue food coloring. Invite your 
              child
               to stir the applesauce and watch as it turns into a green fruity 
              treat.
              
                         
              
                        Easy Shamrock Cookies
              
                        Purchase two rolls of refrigerated sugar cookie dough.  
                        Have each child wash his/her hands.
  Then give them each a 3/8" slice of dough and piece of waxed paper.  
                        Help each child divide
 the dough into four pieces.  Then have them roll 3 pieces of the 
                        dough into balls and place
 them together on the waxed paper to form a shamrock.  Have the 
                        children slightly flatten the
 dough balls. Then for the extra piece, they roll into a snake to for a 
                        stem for their shamrock.
  Encourage the children to cover their shamrocks with green sugar 
                        sprinkles.  Place the cookies
 on a foil lined cookie sheet.  Use a permanent marker to write each 
                        child's name on the foil beside
 his/her cookie.  Bake the cookies according to the directions 
                        provided on the cookie dough wrapper. 
 Cool the cookies on a baking sheet before serving them.  Provide 
                        green food coloring in milk for dipping.
